  1. 0 1/4 watermelon , peeled and diced into 2 1/2cm 2 1/2 cm ginger , peeled and finely grated

  2. 1 fresh lime juice , grated zest

  3. 300 ml sparkling wine , or champagne

  4. 1/2 stalk lemongrass , finely chopped

  5. 3 limes , cut into small chunks

  1. Watermelon and ginger teacups Method 1. In a large bowl, mix together the watermelon, ginger and lime zest and juice. Set aside to marinate for 1 hour.

  2. Transfer the watermelon mixture in a blender and blend until smooth, around 2 minutes.

  3. Pass the pureed mixture through a sieve or strainer, using a wooden spoon to push through the flesh. Discard the pips and fibres.

  4. Pour this mixture into a glass jug and top up with sparkling wine.

  5. Add the chunks of lime to the soup and garnish with the crushed lemon grass. Chill and serve over ice.
