  1. Nonstick cooking spray

  2. For Crust

  3. 1/2 cup 99g / 3 1/2oz Unsalted butter - (1 stick)

  4. 2 Semisweet chocolate - (1 oz ea) - chopped

  5. 1 cup 93g / 3 1/3oz Flaked coconut

  6. 5 1/2 cups 803g / 28oz Graham cracker crumbs

  7. 1/2 cup 73g / 2.6oz Finely chopped dry roasted peanuts

  8. For Cream Cheese Layer

  9. 2 Cream cheese - (8 oz ea) - softened

  10. 3/4 cup 148g / 5 1/5oz Granulated sugar

  11. 1/4 cup 49g / 1.7oz Peanut butter

  12. 1 teaspoon 5ml Vanilla

  13. For Topping

  14. 1/4 cup 49g / 1.7oz Unsalted butter - (1/2 stick)

  15. 4 Semisweet chocolate - (1 oz ea) - chopped

  1. Lightly spray a 9- by 13-inch baking dish with cooking spray.

  2. To prepare crust: In a medium microwave-safe bowl, melt butter with chocolate on medium power, about 1 to 2 minutes, stirring once. Combine coconut, graham cracker crumbs and peanuts. Add chocolate-butter mixture, stirring until the ingredients are moistened. Press into bottom of the baking dish; refrigerate.

  3. To prepare cream-cheese layer: In a food processor or with an electric mixer, combine cream cheese, granulated sugar, peanut butter and vanilla, mixing until smooth. Scrape mixture over crust; smooth with a spatula. Refrigerate.

  4. To prepare topping: In a medium microwave-safe bowl, melt butter with chocolate on medium power, about 1 to 2 minutes, stirring once; pour over cream-cheese layer, spreading gently with a spatula. Refrigerate several hours before cutting. Store in refrigerator.

  5. Yield: 24 bars.
