  6. 2 c Brown sugar

  7. 1 c Chopped grn pepper

  8. 3/4 c Vinegar

  9. 1 c Chopped sweet red

  10. 1/2 ts Salt

  11. Pepper

  12. 1/4 ts Cinnamon

  13. 1 c Chopped onion

  14. 1/4 ts Ground red pepper

  15. 1 tb Chopped candied ginger

  16. 1 Lime

  17. 1 Lemon

  18. 1 c Light raisins

  19. 1 lb Anjou pears

  20. *Fresh Anjou pears should be pared, cored and coarsely

  21. chopped. In a saucepan, combine brown sugar, vinegar,

  22. salt, cinnamon and red pepper. Bring to a boil.

  23. Reduce heat and simmer, uncovered, 10 minutes. Finely

  24. shred peel from lime and lemon; squeeze juice from

  25. each. In a large bowl combine lemon and lime peel and juices, pears, peppers, onion and ginger. Add raisins,

  26. mixing gently. Add mixture to hot syrup. Heat to

  27. boiling; reduce heat and simmer, uncovered, about one

  28. hour or till thick. Ladle chutney at once into hot,

  29. clean pint jars, leaving a 1/4 inch headspace. Store
