  1. 1 tablespoon olive oil

  2. 1 cup onion minced

  3. 1 cup carrots grated

  4. 1 cup turnip grated

  5. 1 cup zucchini grated

  6. 1 cup beets grated

  7. 1/2 tablespoon garlic chopped

  8. 1/2 teaspoon cumin ground

  9. 3/4 tablespoon dill weed and tarragon, mixed

  10. 1/4 cup rolled oats instant

  11. 1/4 cup water

  12. 1 1/2 cups potatoes mashed

  13. 1/4 cup hazelnuts chopped

  14. 1/3 cup rice, cooked

  15. 1 x salt

  16. 1 x black pepper

  17. 1 x olive oil for sauteing*

  1. Heat oil in a large skillet.

  2. Add onion, carrots, turnips, zucchini, beets, garlic, cumin and herbs.

  3. Saute until vegetables begin to wilt, about 3 to 5 minutes.

  4. Allow to cool slightly.

  5. Soak oats in water for 5 minutes, then drain and press out excess water.

  6. Add to vegetable mixture along with potatoes, hazelnuts and rice.

  7. Season with salt and pepper.

  8. Form mixture into 8 patties.

  9. Grill patties on a well-oiled vegetable grill, or sauté in olive oil for 3 to 4 minutes on each side, until golden.

  10. Serve as desired with or without a bun. They work quite well on their own along with home-made spicy tomato ketchup. See link for a recipe below.
