  2. 1 tablespoon olive oil

  3. 6 medium cut pork chops

  4. salt and pepper to taste

  5. 1 lemon -- juice of

  6. 1 lime -- juice of

  7. 1/4 cup cilantro

  1. Heat an iron skillet to medium-high heat. Add olive oil. Season pork chops on both sides with salt and pepper. Add pork chops to the heated skillet and cook until well browned, about 3 minutes. Turn pork chops over and continue cooking for about 4 more minutes.

  2. Before removing pork chops from skillet, add lemon and lime juice to deglace. Add cilantro and stir in pan.

  3. Remove pork chops and place on a warm platter. Serve immediately.
