  1. 4 tablespoons 60ml Yellow onions - sliced (large)

  2. 3 tablespoons 45ml Butter or safflower oil

  3. 1 Vegetable stock

  4. 2 cups 474ml Tomato or V-

  5. 8 juice

  6. 1 Garlic clove - minced

  7. 1/2 teaspoon 2 1/2ml Dried tarragon

  8. 1 pinch Thyme

  9. 2 teaspoons 10ml Lemon juice

  10. 1 tablespoon 15ml Brandy - more if desired

  11. Salt - to taste

  12. Freshly-ground black pepper - to taste

  13. 1/2 cup 73g / 2.6oz Parmesan or Gruyere cheese - grated

  14. 6 French bread - (to 8) - toasted

  1. Saute the onions and garlic in the butter or oil until the onions are very tender. Add the stock and remaining ingredients except the bread and cheese. Cover and simmer for 1 hour.

  2. Place a heaping tablespoonful of cheese in each bowl (or atop a crouton in each bowl) and ladle the soup over it. Serve at once.
