  1. 2 cups 292g / 10oz Diced raw potatoes

  2. 3/4 cup 46g / 1.6oz Minced onion

  3. 1/2 cup 55g / 1.9oz Diced celery

  4. 2 1/2 teaspoons 12ml Salt

  5. 2 1/2 cups 592ml Boiling water

  6. 4 tablespoons 60ml Corn oil

  7. 4 tablespoons 60ml Flour

  8. 1/4 teaspoon 1 1/3ml Freshly-ground black pepper

  9. 1/2 teaspoon 2 1/2ml Dry mustard

  10. 1 1/2 teaspoons 7 1/2ml Bottled meat sauce (???)

  11. 2 cups 474ml Milk

  12. 1 cup 146g / 5.1oz Grated cheddar cheese

  13. 1 tablespoon 15ml Minced parsley

  14. 1 cup 62g / 2 1/5oz Canned tomatoes - drained, chopped

  1. Combine potatoes, onion, celery, salt and boiling water in a deep kettle. Simmer until tender, about 15 minutes.

  2. Heat oil and stir in flour until smooth. Add the next four ingredients while stirring. Cook until thickened. Add cheese and stir all into the potato mixture. Add parsley and tomatoes. Heat through but not boil.

  3. This recipe yields 6 servings.
