  1. The dressing

  2. 1 tablespoon Dijon mustard

  3. 2 tablespoons red wine vinegar

  4. 1 tablespoon applecider vinegar

  5. 1 teaspoon kosher salt

  6. 1/2 cup extra virgin olive oil

  7. The coleslaw

  8. 1 small red onion , very thinly sliced

  9. 2 jalapeno s, seeded, cut in half and sliced crosswise

  10. 1/4 cup chopped cilantro

  11. 1 head green cabbage , core and outer leaves removed, and very thinly sliced

  12. Kosher salt

  1. For the vinaigrette: Combine mustard, vinegar and salt in a blender. Slowly add in olive oil until well blended.

  2. For the coleslaw: toss onions with jalapeno, parsley, cabbage and salt. Toss with vinaigrette until evenly coated.
