  5. Cake:

  6. 6 lg Eggs

  7. 3/4 c Sugar/ minus

  8. 1 tbs

  9. 1 ts Vanilla extract

  10. 1/2 c Plus

  11. 1 tb sifted all-purpose

  12. -flour

  13. 1/4 c Sifted unsweetened cocoa

  14. 1 ts Ground allspice

  15. 1 ts Ground cinnamon

  16. 1/4 ts Ground nutmeg

  17. Frosting and filling:

  18. 1 1/2 c Part-skim ricotta cheese

  19. 1/4 c Plus

  20. 2 tbs unsweetened cocoa

  21. 2 tb Instant espresso powder

  22. 3 tb Sugar

  23. 2 ts Vanilla extract

  24. 1/8 ts Salt

  25. 3/4 c Apricot all-fruit spread

  26. Garnish: strawberries

  29. 350. For cake: Spray two

  30. 8 inch round cake

  31. pans with nonstick cooking spray. In a large bowl, using

  32. an electric mixer set at high speed, beat the eggs, sugar,

  33. and vanilla until thick and tripled in volume, abuot 7

  34. minutes.

  35. In a medium bowl, sift together the flour, cocoa powder,

  36. allspice, cinnamon, and nutmeg. Using a large spatula,

  37. quickly and gently fold the dry ingredients into the egg

  38. mixture until smooth. Divide the mixture between the two

  39. prepared pans. Bake until a toothpick inserted in the

  40. center comes out clean,a bout 15 minutes. Cool completely

  41. in the pans set on racks.

  42. For frosting:

  43. In a food processor or blender, process the ricotta cheese,

  44. cocoa powder, espresso powder, sugar, vanilla and salt

  45. until smooth. Cover and chill the frosting until ready to

  46. use. Whent he cake is cool, turn it out of the pans. With a

  47. long serrated knife split each layer in half horizontally

  48. and spread the bottom of each layer wtih half of the

  49. apricot all-fruit spread. Carefully replace the top halfs.

  50. Spread half of the frosting evenly over the top of one of

  51. the filled layers. Stack the second layer on top of the

  52. first. Swirl teh remaining frosting evenly over the top of

  53. the cake. Garnish with whole strawberries, if desired.

  54. My note: to cut the cake layers another way, try using
