  1. 1 pint fresh strawberries, diced

  2. 3 cups plus 2 T. all purpouse flour

  3. 2 cups granulated sugar

  4. 1 T. cinnamon

  5. 1 tsp salt

  6. 1 tsp baking soda

  7. 1 1/4 c. vegetable oil

  8. 4 eggs, beaten

  9. 1 tsp almond or orange extract

  10. 1 1/4 c. chopped pecans

  11. In a large mixing bowl combine flour, sugar, cinnamon, salt and baking soda. In another bowl, mix vegetable oil, eggs and extract. Add wet ingredients to dry mixture, stirring gently to blend, then fold in strawberries and pecans. Spooon batter into two greased and floured 8 1/2X4 1/2" bread pans.

  12. 350 F oven for 60 to 75 minutes or until bread tests done. Makes

  13. 2 loaves.

  14. I used the orange flavoring and bake in small mini bundt pans.

  15. You can reserve a little strawberry juice and mix with 4 ounces of cream cheese for a nice spread on the bread.
