  1. Lemon Orzo With Roasted Asparagus

  2. Serves 4 1 cup orzo

  3. 1 tablespoon grated lemon zest

  4. 1/4 cup freshly squeezed lemon juice

  5. 1/4 teaspoon salt

  6. dash of coarsely ground pepper

  7. 1 tablespoon extra-virgin olive oil

  8. 8 roasted asparagus spears

  9. 1/4 cup chopped flat leaf parsley

  10. 2 tablespoons toasted pine nuts

  11. Cook pasta according to package directions. Drain and set aside.

  12. Combine lemon zest, lemon juice, salt and pepper. Slowly add oil

  13. to juice mixture, stirring constantly with a small whisk or fork,

  14. until well blended. Add to pasta and toss to coat. Cool to room

  15. temperature. Cut roasted asparagus into 1-inch pieces. Stir in

  16. asparagus, parsley and pine nuts.
