  8. 10 c Zucchini, chopped

  9. 4 c Onion, chopped

  10. 5 tb Salt

  11. 1 Sweet red pepper, chopped

  12. 1 Green pepper, chopped

  13. 3 c Sugar

  14. 2 tb Cornstarch

  15. 1 tb Turmeric

  16. 2 ts Dry mustard

  17. 2 ts Celery seed

  18. 1/2 ts Pepper

  19. 2 1/2 c Cider vinegar

  20. Combine zucchini, onion and salt; let stand overnight.

  21. Rinse and drain well. Place in a large kettle or Dutch oven along with remaining ingredients; cook

  22. until mixture thickens, stiring constantly. Do not

  23. overcook. Pack hot into hot sterilized jars, leaving

  24. 1/4 inch headspace. Adjust caps. Process

  25. 10 minutes

  26. in a boiling water bath. Yield: 16 half-pints.
