  2. 1 1/2 tablespoons 1 1/2 tablespoons 60 ml 5 teaspoons 1 tablespoon 3 tablespoons 1-2 1/4 Lean pork-lion Cooking oil for brushing Cucumber, thinly sliced Cornstarch (mixed with 2 tablespoons water to form paste) Dark soy sauce Red bean curd sauce Light soy sauce Sugar Wine Honey or corn syrup Drops red coloring Salt

  1. : Mix well together all the seasoning ingredients. Cut the pork into two long strips, following the grain. Put them in a bowl. Pour seasonings onto the meat. Mix well and leave to marinate for an hour. Preheat oven at 240 o C/475 o F/Mark 9. Place pork strips on a rack with a drip tray underneath it. Roast for 30 minutes. Baste meat strips with remaining marinade and oil. Turn each strip over and repeat. Reduce heat and bake for another 10 minutes. Remove from oven and slice thinly across the grain. To make sauce :Save the marinade. Reheat and thicken with cornstarch mixture. Serve with sliced cucumber and marinade sauce or chili sauce, if preferred.
