  1. To 9 cups of prepared fruit add 5 cups of sugar, 1 cup crushed pineapple, and the grated rind and juice of one lemon. Put the pears through a fine blade on a food grinder, and use the juice as well as the fruit. Cook over low heat until thick and clear (about 20 - 30 minutes). Stir frequently to avoid scorching. Seal in jars.
