  1. Anzac Biscuits

  2. (makes about 24):

  3. 1 cup rolled oats

  4. 1 cup plain flour

  5. 3/4 cup desiccated coconut

  6. 1 cup sugar

  7. 125 g margarine

  8. 1 T golden syrup

  9. 1 1/2 t bicarbonate of soda

  10. 2 T boiling water

  11. Mix oats, flour, sugar and coconut. Melt syrup and margarine

  12. butter!

  13. together in a small saucepan. Mix soda with boiling

  14. water and add to the syrup and margarine mix. Add dry ingredients

  15. and mix thoroughly.

  16. 1 T each room for spreading while cooking.

  18. 150 degrees Celsius

  19. completely on racks before storing any you might have left :-)

  23. 1915 during World War I - a 9-month campaign with grievous

  24. losses). This day has become our most important national day of

  25. remembrance.

  26. Scottish oatmeal biscuits were cooked at home during WWI and sent

  27. to the soldiers fighting overseas. After the war, these oat-based

  28. biscuits were named Anzac Biscuits when they were made and sold as

  29. fund-raisers for returned soldiers.
