  2. 3 tbsp. olive oil

  3. 1/2 cup minced onion

  4. 1 cup canned tomato sauce

  5. 2 cloves garlic, minced

  6. 1/2 tsp. dried oregano

  7. 1/4 tsp. Italian Seasoning

  8. 3/4 cup sliced fresh mushrooms

  9. 1/2 medium zucchini, thinly sliced

  10. four 6 inch corn or flour tortillas

  11. 1 cup grated mozzarella cheese

  12. 1/2 cup diced green bell pepper

  13. 1/2 cup diced red bell pepper

  14. 1/2 cup sliced black olives

  1. Preheat oven to 350 degrees. Heat 2 tbsp. oil in a medium saucepan. Add onions and cook about 5 minutes until golden, stirring occasionally. Stir in tomato sauce, garlic, oregano and Italian seasoning. Simmer about 5 minutes until thickened. Heat remaining 1 tbsp. oil in a medium skillet. Add mushrooms and zucchini. Cook until tender, stirring occasionally, about 5 minutes. Place tortillas on a sheet pan. Bake 4 minutes until crisp. Spread 1/4 cup sauce over each tortilla, leaving a 1/2 inch edge all around. Sprinkle 1/4 cup mozzarella evenly over each pizza. Top pizzas with bell peppers, olives, mushrooms and zucchini. Bake about 5 minutes until cheese is melted.
