  1. 1 c SUGAR

  2. 1 c BUTTER/MARGARINE, SOFTENED

  3. 1/4 c APPLE BUTTER

  4. 1 EGG

  5. 2 1/2 c ALL-PURPOSE FLOUR

  6. 1 c CHEDDAR CHEESE, SHREDDED

  7. 1/2 ts BAKING SODA

  8. 1/2 ts APPLE PIE SPICE

  1. Mix sugar, butter, apple butter and egg.

  2. Stir in remaining ingredients.

  3. Cover and refrigerate at least 2 hours.

  4. Divide dough in half.

  5. Shape each Half into roll, about 1 1/2 inches in diameter and out 8 inches long.

  6. Wrap And refrigerate at least 4 hours.

  7. Heat oven to 400 degrees.

  8. Cut rolls into 1/8-inch slices.

  9. Place about 1 inch apart on ungreased cookie sheet.

  10. Bake 7 to 9 minutes or until edges are light brown; cool.

  11. About 6 dozen cookies; 55 calories per cookie.
