  1. 1 cup 160g / 5.6oz Black beans

  2. 3 White corn ears - steamed, and Kernels removed

  3. 1 Small bunch cilantro - chopped

  4. 2 Jalapeno peppers - finely diced (small)

  5. 1 Red pepper - diced (large)

  6. 1 Red onion - diced (small)

  7. 2 Celery ribs - diced

  8. 1/2 cup 118ml Lime juice

  9. 2 tablespoons 30ml Olive oil

  10. Salt - to taste

  11. 2 Garlic cloves - crushed

  12. 2 teaspoons 10ml Cumin

  13. 1 teaspoon 5ml Chili powder

  1. Wash, sort and soak the beans 6 to 8 hours or overnight.

  2. Place the soaked and rinsed beans in a 4-quart or larger pressure cooker.

  3. Add water and bring pressure to second red ring (15 pounds pressure) over high heat. Adjust heat to stabilize pressure at the second red ring. Cook for 10 to 12 minutes.

  4. Remove from heat and let the pressure subside naturally.

  5. Place beans, corn, peppers, onion, cilantro and jalapenos in a large bowl.

  6. Whisk together lime juice, oil, garlic, cumin and chili powder and toss to coat the salad.

  7. This recipe yields 4 to 6 servings.
