  1. Vegetable oil spray

  2. 2 lbs 908g / 32oz Halibut fillets

  3. (or other firm fish steaks)

  4. 2/3 cup 41g / 1.4oz Thinly sliced onion

  5. 1 1/2 cups 355ml Sliced fresh mushrooms

  6. 1/3 cup 20g / 0.7oz Chopped tomato

  7. 1/4 cup 36g / 1 1/3oz Chopped green bell pepper

  8. 1/4 cup 36g / 1 1/3oz Chopped fresh parsley

  9. 3 tablespoons 45ml Chopped pimiento

  10. 1/2 cup 118ml Dry white wine

  11. 2 tablespoons 30ml Fresh lemon juice

  12. 1/4 teaspoon 1 1/3ml Dill weed

  13. Black pepper - freshly ground, to taste

  14. 8 Lemon wedges - for garnish

  1. Preheat oven to 350F Lightly spray a covered baking dish with vegetable oil.

  2. Rinse fish and pat dry.

  3. Arrange onion slices in the bottom of prepared baking dish. Place fish on top. Set aside. In a bowl, combine remaining vegetables. Stir to mix well, and spread over fillets.

  4. In a small bowl, combine wine, lemon juice, dill, and black pepper. Pour over fish and vegetables. Cover and bake 25 to 30 minutes, or until fish flakes easily when tested with a fork.

  5. Garnish with lemon wedges.
