  1. Tomato Butter

  2. 6 pounds (12 to 18 medium) green tomatoes

  3. 2 tablespoons powdered ginger

  4. 2 teaspoons powdered cinnamon

  5. 1 teaspoon powdered allspice

  6. 5 pounds brown sugar

  7. juice of two lemons

  8. 2 cups water

  9. Coarsely chop green tomatoes without peeling or coring. Add

  10. remaining ingredients. Simmer over low heat two to three hours,

  11. until mixture is thick, stirring frequently. Run through colander

  12. or strainer to remove seeds and any hard bits of pulp. Reheat to

  13. boiling and pour into hot, sterilized pint canning jars. Seal

  14. immediately. Makes four pints.
