  1. 1 tb Lemon juice

  2. Fresh bay leaves

  3. 3/4 c Whipping cream

  4. 3/4 c Pineapple juice

  5. 1 tb Light-brown sugar

  6. 2 tb Butter

  7. 4 Pieces crystallized ginger,

  8. 4 lg Firm pears

  9. Toasted flaked almonds

  1. Preheat oven to 375'F.

  2. (190'C. ).

  3. Lightly grease a shallow baking dish.

  4. Fill a bowl with cold water and add lemon juice.

  5. Peel pears and cut in half.

  6. Cut away stems and remove cores with a teaspoon.

  7. Drop prepared pears in lemon water.

  8. Pat pears dry on paper towels.

  9. Place a piece of crystallized ginger into "well" of each pear half.

  10. Arrange pears, cut-sides down, in greased dish.

  11. Put butter, brown sugar and pineapple juice into a saucepan and heat gently to dissolve sugar.

  12. Add whipping cream and boil 5 minutes.

  13. Pour sauce over pears.

  14. Cover and bake in preheat oven 1 hour or until pears are tender and sauce has thickened.

  15. Baste pears with sauce several times during baking.

  16. Place pears on a warm serving plate and spoon sauce over pears.

  17. Arrange bay leaves to resemble pear leaves and garnish with almonds.

  18. Serve hot.
