  1. 2 cups 125g / 4.4oz Onion - peeled, chopped (medium)

  2. 1 tablespoon 15ml Olive oil

  3. 3 Garlic shoots removed and minced

  4. 2 Chicken breasts skinned boned fat removed cut into bite size pieces

  5. 1 1/2 teaspoons 7 1/2ml Cajun seasoning or to taste - up to

  6. 1 2 Diced ripe tomatoes

  7. 3/4 cup 177ml Dry sherry

  8. 8 cups 1280g / 45oz Cooked brown rice

  1. Recipe Instructions In a heavy saucepan, saute onions in olive oil until transparent. Add garlic and saute 5 minutes. Add chicken and Cajun seasoning. Cook over medium high heat until chicken is opaque, stirring constantly. Add tomatoes and sherry and simmer, covered, for 20 minutes. Serve over rice, accompanied by steamed fresh broccoli florets.
