  1. 1/4 cup 15g / 1/2oz Pitted dried cherries

  2. 3 tablespoons 45ml Firmly packed brown sugar - divided

  3. 1/2 teaspoon 2 1/2ml Ground cinnamon

  4. 1/4 teaspoon 1 1/3ml Grated lemon rind

  5. 1 tablespoon 15ml Bourbon

  6. 2 tablespoons 30ml Unpeeled cooking apples (large)

  7. 1/2 cup 118ml Boiling water

  1. Combine cherries, 2 tablespoons brown sugar, cinnamon, lemon rind, and bourbon in a small bowl; stir well, and set aside.

  2. Core apples three-fourths of the way through. (Do not cut through bottom). Peel top third of each apple. Place in a baking dish. Fill centers of apples with cherry mixture.

  3. Sprinkle the remaining 1 tablespoon brown sugar in bottom of dish. Pour boiling water into baking dish. Bake at 400F for 45 minutes or until tender, basting apples once with syrup from pan.
