  2. Title: Chick Pea And Spinach Soup

  5. 1 lg Onion, chopped

  6. 4 Cloves garlic, minced

  7. 1 c Skim milk

  8. 16 oz Chickpeas, drained and -rinsed

  9. 5 c Fresh spinach

  10. 1/8 ts Cardamom

  11. 1/8 ts Nutmeg

  12. 1 ts Curry powder

  13. Salt and pepper

  14. Saute the onion and garlic, covered, over low heat (they will cook in

  15. their own juices) until the onion is translucent. Add the milk and raise heat to medium, and cook just until boiling, stirring

  16. constantly. Reduce heat to prevent boiling over, add chickpeas,

  17. spinach, and spices, and continue to cook, stirring, until spinach is

  18. wilted. Remove from heat. Place 1 1/2 cups of the soup into a

  19. blender or food processor and puree. Return puree to soup, stir well,

  20. and serve hot. Rinse spinach in warm salted water, drain, and shred or chiffonade

  21. before using.
