  2. Oatmeal Crusty Top Apple Pie

  8. 1 c all-purpose flour

  9. 1/2 tsp salt

  10. 1/4 c pure lard

  11. 3 tbsp cold water

  12. Filling:

  13. 4 c peeled, sliced apples

  14. 3/4 c brown sugar

  15. Topping:

  16. 1/4 c rolled oats

  17. 1/4 c all-purpose flour

  18. 2 tbsp brown sugar

  19. 1/4 tsp cinnamon

  20. 1/4 c margarine

  21. For pastry, stir oats, flour and salt, then cut in lard until mixture

  22. resembles coarse crumbs. Blend in water and form into ball of dough with

  23. fingertips.

  24. 5 minutes, then roll to fit an

  25. 8 or 9 pie plate. It is a bit

  26. tender to lift, so pass a spatula under as you fold it in two. If it

  27. breaks, simply join it together.

  28. To fill, stir apples, brown sugar, and cinnamon. Pack into pie shell. To top, mix oats, flour, brown sugar and cinnamon. Cut in margarine until

  29. mixture is crumb-like, then cover apples.

  30. 35 minutes at

  31. 375 degrees F, or until golden brown on top.
