  1. 3 tablespoons olive oil

  2. 2 cloves garlic , sliced thin

  3. 2-3 pounds chicken thighs or breasts, skin removed

  4. Paprika

  5. 1 package mushroom s, sliced

  6. 1 medium onion , sliced

  7. 1-16 ounce can diced tomato es

  8. 2-3 tablespoons tomato paste

  9. 1/3 cup dry sherry

  10. 1 teaspoon salt

  11. 1 teaspoon sugar

  1. In covered skillet, heat olive oil on medium-high. Sprinkle chicken with paprika and place in skillet, along with garlic and onion. When chicken is browned nicely, push to side and add mushrooms. Add remaining ingredients, cover and simmer for 1 hour on low, stirring occasionally.
