  1. 1 medium onion , choppped

  2. 2 stalks celery , chopped

  3. 2 large carrots , chopped

  4. 1 tablespoon olive oil

  5. 900 ml chicken broth thai medium rice noodles, handful

  6. 1 cup choppedcooked turkey or 1 cup chicken

  7. 1 tablespoon chopped fresh parsley

  1. Saute onion, celery and carrot in olive oil until soft.

  2. Add chicken broth and cook until vegetables are tender.

  3. Add rice noodles and simmer about 5 minutes then add turkey and half of the parsley.

  4. Serve when turkey has heated through and garnish with remainder of parsley. ?
