  1. 3 cups 438g / 15oz Papaya - mango or peaches, peeled and chopped

  2. 3 oz 85g Shallots - peeled and thinly

  3. 1 1/2 cups 355ml Cider vinegar

  4. 1/4 cup 59ml Lemon juice

  5. 1 cup 160g / 5.6oz Packed brown sugar

  6. 1/2 cup 80g / 2.8oz Golden raisins

  7. 1 tablespoon 15ml Minced fresh ginger

  8. 2 Minced cloves garlic

  9. 1/2 teaspoon 2 1/2ml Salt

  10. 1/2 teaspoon 2 1/2ml Ground cinnamon

  1. In a large saucepan, combine the papaya, shallots, cider vinegar and lemon juice. Bring to boiling; reduce heat. Simmer, stirring occasionally, for 5 minutes.

  2. Add remaining ingredients to pan; simmer, stirring frequently, for 15 minutes. Cool; spoon into refrigerator or freezer containers.

  3. Cover and chill. Serve chilled or at room temperature with roasts, barbecued meats, on hamburgers, or with fish.

  4. Makes 3-1/4 cups.
