  1. 1/2 cup butter or butter spread

  2. 1 cup White Sugar

  3. 1/2 cup brown sugar

  4. 3 ripe bananas

  5. 3 eggs

  6. 1 Tablespoon of vanilla (and rum if desired)

  7. 2 cups white flour

  8. 1 teaspoon baking soda

  9. 1teaspoon cornstarch

  10. 1/2 teaspoon salt

  11. 1/2 cup plain non-fat yogurt

  1. Preheat the oven to 375 Butter and flour a 9"square cake pan.

  2. Cream the butter and the sugar together.

  3. Add bananas, eggs,vanilla, and beat well by hand.

  4. Mix flour, baking soda, cornstarch, salt, blending well.

  5. Fold in the yogurt.

  6. Pour into the cake pan, and bake for 1 hour. Test with a toothpick, turn the oven to 400 and bake another 1/2 hour.

  7. Cool about 10 minutes before turning it out of the pan, or serve from the pan with whipped cream if not iced.
