  1. breast of chicken

  2. 1 red onion (sliced)

  3. 1 garlic clove (crushed chopped)

  4. 1 bullet chillie chopped (seeds removed if u don't wnt it hot)

  5. 2 tbsp olive oil

  6. small tin chopped tomatoes

  7. seeds from 4 cardamon pods

  8. 1/2 tsp ground coriander

  9. 1/2 tsp ground cumin

  10. 1/2 tsp tumeric

  11. 1 tbsp curry paste (mild or hot)

  12. 1 tsp brown sugar

  13. 1/2 cup frozen garden peas

  14. 50g butter

  15. 200g basmati rice

  16. 1 chicken stock cube

  1. slice tne chicken into cubes about 1/4 inches thick heat the olive oil in a pan and add the chopped onion. Cook until it softens.

  2. add garlic and chillie cook briefly low heat (20 secs)

  3. add tomatoes, cumin, brown sugar, tumeric, coriander, cardamon seeds add chicken cook gently for 3 minutes add the butter let it melt ad the rice coat the rice in the butter and spices, then cover with boiling water add the stock cube bring to the boil and simmer(should be cooked in roughly 12 minues)

  4. Add the peas a couple of minutes before the end Enjoy
