  1. 340g pasta

  2. 1 tablespoon olive oil

  3. 450g spicy Italian pork sausage, sliced

  4. 1 onion, chopped

  5. 4 cloves garlic, finely chopped

  6. 415ml chicken stock

  7. 1 teaspoon dried basil

  8. 1 (400g) tin chopped tomatoes

  9. 285g frozen chopped spinach

  10. 40g grated Parmesan cheese

  1. Bring a large pot of lightly salted water to the boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain and reserve.

  2. In a large frying pan, heat oil and sausage; cook through until no longer pink. During the last 5 minutes of cooking, add onion and garlic to pan. Add stock, basil and tomatoes with liquid.

  3. Cook over medium heat for 5 minutes to slightly reduce. Add chopped spinach; cover pan and simmer on reduced heat until spinach is tender.

  4. Add pasta to pan and mix together. Sprinkle with cheese and serve immediately.
