  1. 1 1/2 cups 355ml Heavy or whipping cream

  2. 6 oz 170g Aged gorgonzola cheese

  3. 1 teaspoon 5ml Fresh thyme or 1/2 teaspoon 2 1/2ml Dried thyme

  4. 3 Generous grates nutmeg or 1/8 teaspoon 0.6ml Ground nutmeg

  5. Salt

  6. White pepper

  7. Hot cooked pasta

  1. Stir together cream, cheese, thyme, and nutmeg in a large skillet.

  2. Cook gently over medium heat until mixture reduces by one-fourth.

  3. Add salt and pepper to taste. Toss with pasta to coat well.

  4. Serve with extra nutmeg, if desired.
