  1. 1 media onion , finely shopped

  2. 3 cloves of garlic , minced

  3. 1 1/2 teaspoon(s) chili powder

  4. 1/2 teaspoon(s) ground cumin

  5. 1/2 teaspoon(s) dried oregano

  6. 2 can(s) corn ,

  7. 30 oz - drained

  8. 1 can(s) pinto beans ,

  9. 15 oz - drained

  10. 1 1/2 pound(s) boneless, skinless chicken thighs , cut into 1-inch pieces

  11. 1 cup(s) chicken broth

  12. 2 cup(s) kale , chopped

  1. Combine onion, garlic, chili power, cumin and oregano in Crock-pot.

  2. Add corn, beans, chicken and broth. Stir well to combine. Cover; cook on LOW 7 hours.

  3. Add kale after 7 hours. Garnish with sour cream or avocado.
