  7. 3 lb Chicken

  8. 4 Cloves garlic

  9. 1 Large onion

  10. 3 tb Vegetable oil

  11. 1 Salt

  12. 2 tb Lemon grass -- minced

  13. 1 t Ground chilies

  14. 4 tb Fish sauce (nuoc mam)

  15. 1 tb Granulated sugar

  16. 1 tb Caramel sauce (below)

  17. 1 c Water

  18. (Thai Chicken in Lemon Grass and Chile)

  19. Rinse chicken and dry well. Cut into small pieces.

  20. Peel garlic and slice finely. Cut onion into halves

  21. lengthwise and then cut lengthwise into 1/2 strips.

  22. Heat oil in large frying pan over medium heat. Add a

  23. pinch of salt, garlic and onion. Fry over medium heat

  24. until onion becomes translucent. Add lemon grass and 1 to 2 minutes until fragrant.

  25. Add chicken and cook until lightly browned. Add fish

  26. sauce, sugar and caramel sauce. Mix well. Add 1 cup

  27. water and cook 45 minutes or until chicen is tender.

  28. Stir occasionally and add more water if necessary.

  29. Makes 4 servings.

  30. CARAMEL SAUCE:

  31. 1/2 c sugar with

  32. 4 tablespoons of water in a

  33. heavy saucepan. Bring to a boil over medium heat and let boil until mixture changes colour. Turn heat down

  34. to low and heat until brown. Add 1/2 cup water to

  35. mixture. Stir until sugar is dissolved. Remove from

  36. heat and store in a jar in the refrigerator. - - - - - - - - - - - - - - - - - -
