  2. 3 medium carrots , peeled and sliced

  3. 1 medium onion , thinly sliced

  4. 1 large leek , cleaned and cut crosswise into slices

  5. 3 cup(s) coarsely chopped Swiss chard

  6. 2 cup(s) sliced fresh mushrooms

  7. 1 quart(s) vegetable or chicken broth

  8. 3 cup(s) water

  9. 1/2 teaspoon(s) salt

  10. 1/2 teaspoon(s) ground black pepper

  11. 1 cup(s) quick-cooking barley

  1. In 6-quart saucepot, heat oil over medium heat. Add carrots, onion, and leek; sauté 5 minutes. Add chard and mushrooms; cook 1 minute. Add broth, water, salt, and pepper; heat to boiling over high heat. Stir in barley. Reduce heat to low; cover and simmer 15 minutes.

  2. To serve, divide soup among serving bowls and serve immediately.
