  1. 1 cup Sugar

  2. 1/2 cup Oil

  3. 1 cup Mashed Ripe Bananas

  4. 1/2 cup Plain or Vanilla Yogurt

  5. 1 tsp Vanilla

  6. 2 Eggs

  7. 2 cups Flour

  8. 1 tsp Baking Soda

  9. 1/2 tsp Salt

  10. 1-1 1/2 cups Fresh or Frozen Blueberries

  1. In large bowl, beat together sugar and oil. Add bananas, yogurt, vanilla, and eggs, then blend well. Add flour, baking soda, and salt, then stir ingredients until moistened. Gently stir in the blueberries. Pour into greased and floured pans, or use baking spray. This will make two medium loaves or one large and one smaller. Bake at 350 degrees, for 40-50 minutes, or until a toothpick inserted in center comes out clean. Cool 5 minutes and remove from pans. Cool completely. Wrap tightly and store in refrigerator.
