  1. 125g plain flour

  2. 1 teaspoon baking powder

  3. 110g butter, melted

  4. 60g plain chocolate, chopped

  5. 200g caster sugar

  6. 2 eggs

  7. 1 teaspoon vanilla extract

  8. 170g plain chocolate chips

  9. 4 tablespoons icing sugar for rolling

  1. Sift together the flour and baking powder; set aside. In a medium bowl, stir chocolate into melted butter until melted and smooth. Mix in the sugar, eggs and vanilla. Gradually blend in the sifted ingredients. Stir in the chocolate chips. Cover and chill for at least 2 hours or overnight.

  2. Preheat oven to 180 C / Gas 4. Grease baking trays or line them with parchment. Roll the chilled cookie dough into 2.5cm balls and roll each ball in icing sugar. Place cookies 5cm apart onto the prepared trays - do not flatten.

  3. Bake for 9 to 12 minutes in the preheated oven, until the tops are cracked. Remove from trays to cool on wire racks.
