  2. 5 1/2 cups cider vinegar

  3. 1/4 cup fresh jalapeños -- quartered (and seeded desired)

  4. 3 pounds fresh peaches -- finely chopped

  5. 6 cups sugar

  6. 1 teaspoon celery seed

  7. 1 teaspoon whole allspice

  8. 4 drops green food coloring

  9. 6 Ounces liquid pectin

  1. Combine vinegar and jalapeños in blender; process, pulsing on and off to desired fineness. Combine with peaches, sugar, celery seed and allspice in large kettle; bring to a boil. Reduce heat and simmer 45 to 50 minutes, stirring frequently. Let cool 2 minutes, then add food coloring and pectin. Ladle into hot sterilized jars. Seal and process in boiling-water bath 15 minutes. Start timing when water returns to a boil after filled jars are lowered into kettle. Remove from kettle and let cool.
