  1. 1/2 cup 100% all bran or bran flakes

  2. 1/2 cup boiling water

  3. 1/4 cup honey

  4. 1/2 cup sugar

  5. 1/4 cup shortening

  6. 1 teaspoon baking soda

  7. 1/2 teaspoon salt

  8. 1 egg

  9. 1 1/4 cups all-purpose flour

  10. 1 cup buttermilk

  11. 1 cup 100% all-bran or bran flakes

  12. 1/2 cup bran, boiling water and honey. Set aside. In large mixing bowl, beat sugar, shortening, soda and salt at medium speed of electric mixer until blended. Beat in egg. Stir in half the flour. Add bran mixture and remaining

  13. 1 cup bran. Mix well. Line Eggs 'N Muffin cups with paper baking cups. Fill cups half full of batter. Microwave

  14. 6 muffins at high for 2 1/2 to 4 1/2 minutes, or until muffins are no longer moist on top. Repeat with remaining batter. About 2 dozen muffins.
