  5. 1 egg white

  6. 1 tablespoon canola oil

  7. 1/4 cup unsweetened applesauce

  8. 1 tablespoon honey

  9. 1 tablespoon brown sugar

  10. 1 cup quick-cooking oats

  11. 1/3 cup whole-wheat flour

  12. 1/3 cup white flour

  13. 1/2 cup currants or raisins

  14. 1 teaspoon vanilla

  15. 1 teaspoon cinnamon

  16. 2 teaspoons baking powder

  1. Preheat the oven to 375 degrees. Combine all ingredients and mix until blended. Do not overbeat. Pour the batter into 12 nonstick muffin cups and bake for 20 to 25 minutes. Remove muffins from oven and let cool slightly. Remove muffins from pan and let cool completely.
