  1. 90g porridge oats

  2. 375ml milk

  3. 3tbsp ground cinnamon

  4. 1tbsp ground cumin

  5. 1tbsp ground coriander

  6. 2tsp red chilli paste

  7. 100g high-quality dark chocolate

  8. 1 lime and zest of

  9. A pinch of chilli flakes

  1. Place the porridge oats and milk in a medium pan. Bring to the boil, turn down the heat, then gently simmer, stirring often. Whilst the porridge is simmering, add the ground cinnamon, cumin and coriander.

  2. When the porridge is thick and creamy, add the chilli paste and melt in almost all of the dark chocolate, saving a little for garnishing. Stir to blend together.

  3. Finish cooking the porridge keeping a little bite, and test for flavour - it should be chocolately at first, with a spicy cinnamon depth and kick of chilli. Transfer to a serving bowl and squeeze over the lime juice.

  4. Grate the zest of half the lime and the remaining chocolate over the top. Sprinkle on a few chilli flakes and place two wedges of lime in the centre to garnish.
