  1. 4 cups low sodium chicken broth (use a good quality stock)

  2. 1/2 teaspoon soy sauce

  3. 1/2 cup cooked chicken breast, chopped

  4. 1/2 cup frozen green pea (baby peas are nice)

  5. 1/4 cup green onion , thinly sliced

  6. 1 egg , lightly beaten

  1. In saucepan, bring chicken stock and soy sauce to a boil. Add chicken, peas and green onion; bring to a boil again.

  2. Remove from heat; drizzle in egg in slow steady stream. Let sit for 1 minute for egg to set.

  3. Stir gently before ladling into bowls.
