  1. 3/4 cup 30g / 1.1oz Grape-nuts cereal

  2. 1 1/2 cups 355ml Ricotta

  3. 2 cups 474ml Apples - peeled, cored, and (large) sliced thin

  4. 1/3 cup 65g / 2 1/3oz Sugar

  5. 1 Egg white

  6. 1 Egg - lightly beaten

  7. 1 teaspoon 5ml Lemon rind - grated

  8. 1 teaspoon 5ml Lemon juice

  9. 1 cup 237ml Yogurt - plain

  10. 1/2 teaspoon 2 1/2ml Cinnamon

  1. Recipe Instructions Preheat the oven to 350F. Sprinkle the cereal on the bottom of a greased 8" Springform cake pan. Arrange the apple slices over the cereal. Sprinkle the lemon rind, lemon juice and cinnamon over. Combine the ricotta, sugar, egg white and whole egg and yogurt in a medium bowl. Mix with a spoon until smooth. Pour evenly over the apples. Bake for 45 minutes. Allow to cool. Use a knife around the inner circumference of the pan before removing the side.
