  7. 1 pound extra lean ground beef

  8. 1 onion -- chopped

  9. 1 clove garlic -- minced

  10. 2 teaspoons salt

  11. 1/4 teaspoon pepper

  12. 1 tablespoon chili powder

  13. 12 ounces lowfat cheddar cheese -- shredded

  14. (you may also use Monterey Jack cheese)

  15. 8 ounces tomato sauce

  16. 4 ounces black olives -- chopped

  17. 6 corn tortillas

  18. 2 tablespoons margarine

  19. 1 cup beef broth

  20. Brown beef, onion and garlic in a frying pan. Drain off excess fat. Mix

  21. in seasonings and tomato sauce.

  22. Spread about 1 teaspoon of margarine on each tortilla.

  23. In a medium oven-proof casserole, alternate layers of tortillas, meat

  24. sauce, olives, and cheese. Add broth, cover and bake for 20 minutes at

  25. 400-degrees F.
