  1. 1 ea Chicken,

  2. 3-3-1/2 lb

  3. 1 tb Chilli powder

  4. 10 ea Garlic cloves (chopped fine)

  5. 1/2 c Tequilla (white/gold)

  6. 1 x Cilantro (garnish)

  7. 1 tb Ground cumin

  8. 3 ea Limes (juice of)

  9. 3 tb Olive oil

  10. 1/2 c Water

  1. Remove skin from chicken, cut chicken into parts.

  2. Combine cumin, chilli powder, lime juice, garlic and 1 T oil in a bowl.

  3. Marinate the chicken for 20 minutes.

  4. Heat remaining oil in a heavy skillet, brown chicken on all sides.

  5. Add marinade; tequilla and water.

  6. Cover skillet and poach gently until chicken is cooked through, about 25 minutes.

  7. Transfer chicken peices onto a platter.

  8. Reduce sauce over high heat until of a good coating consistency and pour over chicken.

  9. Garnish with cilantro leaves.

  10. Serve with rice.
