  1. 1/3 cup 78ml Lemon juice

  2. 1/2 cup 118ml Dry white wine

  3. 4 cups 948ml Salmon fillets (large)

  4. 2 tablespoons 30ml Minced parsley

Instructions Jump to Ingredients ↑

  1. In a large skillet over medium-high heat, bring lemon juice and wine to a boil. Lower heat to medium. Add salmon and cover skillet.

  2. Poach salmon until it flakes when pressed with a fork (5 to 8 minutes). Remove from poaching liquid and serve immediately, sprinkled with parsley.

  3. NOTES : A simple but elegant main dish, and one very low in fat, fillet of salmon is also rich in omega-3 oils, which many medical professionals believe help lower cholesterol. For a variation on this recipe, try marinating the salmon in the lemon and wine poaching liquid for several hours and grilling it over hot mesquite charcoal.
