  1. 1 Ripe melon - chopped (abt 3 cups) (large)

  2. 2 Oranges - peeled, diced

  3. 1 teaspoon 5ml Rice wine vinegar

  4. (or 1 teaspoon lemon juice)

  5. 1 tablespoon 15ml Honey

  6. 2 cups 474ml Apple juice

  7. 1 tablespoon 15ml Chopped mint

  8. Salt

  9. 1 Melon shell - cut decoratively (large) to serve the soup

  10. Mint sprigs - for garnish

  1. Combine the melon, orange, vinegar, honey, and apple juice in the work bowl of your food processor. Process until smooth. Stain through a sieve. Add the chopped mint, and adjust the seasonings with more honey and salt if needed. Ladle into the melon shell, and garnish with the mint sprigs.

  2. This recipe yields 6 first-course servings.
