  2. 1 cup navy beans

  3. 7 cups water

  4. 2/3 cup diced carrot

  5. 1/3 cup diced onion

  6. 1 tablespoon vegetable butter

  7. Chopped parsley

  8. Salt to taste

  1. Wash the beans thoroughly, remove from the water, and put into a saucepan with the cold water. Bring to a boil.

  2. Let simmer gently until thoroughly done.

  3. Add salt while cooking.

  4. Put the diced carrot and onion into a saucepan with the vegetable butter and 1/4 cup water. Let simmer until the water is absorbed, stirring often.

  5. Add 2 cups of broth from the beans, salt to taste, and let the vegetables simmer until well cooked.

  6. Add vegetables to the bean soup, bring to a boil, abd add the chopped parsley.

  7. Serve.
