  1. 1/2 Onion - quartered (small)

  2. 3 Garlic - peeled

  3. 2 teaspoons 10ml Olive oil

  4. 2 Red bell peppers

  5. 1 1/2 cups 219g / 7.7oz Tillamook cheddar cheese, grated

  6. 1 Cayenne

  7. 2 tablespoons 30ml Fresh chives, chopped

  1. Preheat oven to 375F.

  2. Place onion and garlic in a small baking dish. Drizzle with oil.

  3. Bake until soft, stirring occasionally, about 50 minutes. Cool.

  4. Meanwhile, char peppers over a gas flame or under broiler until blackened on all sides.

  5. Cool 10 minutes. Peel and seed peppers; pat dry.

  6. Place all ingredients except chives in a food processor. Puree until almost smooth.

  7. Transfer to bowl. Stir in chives. Season with salt and pepper. Cover and refrigerate for at least 2 hours.

  8. (Can be prepared 1 day ahead.)

  9. Makes about 1 1/2 cups.
