  1. BITTER LEMON PIE (for 9" pie)

  2. 2-3 thin skinned lemons sliced paper thin

  3. 2 1/4 cups sugar

  4. 3 eggs

  5. 1/2 cup lemon juice

  6. Mix the lemons and sugar and let sit for at least an hour whisk

  7. the lemon juice and eggs together

  8. Spread the lemons in the pie shell and pour egg mixture over them

  9. cover the pie with the top crust and seal the edges. make several

  10. 375 for 350 and continue baking for minutes. (if crust starts to burn, cover edges with foil)

  11. Let cool for at least 30 minutes.

  12. CRUST

  13. 3 cups flour

  14. 2 Tbsp sugar

  15. 1/4 tsp salt

  16. 3 sticks cold butter

  17. 3 Tbsp ice water (very cold)

  18. Mix the dry ingredients. Cut in the butter. Add just enough water

  19. to hold mixture together.

  20. split into two pieces and wrap each in wax paper and place in

  21. freezer for 30 minutes.

  22. Roll each piece out (one for the crust, one for the top)
